食品生物技术的专业简介

本专业培养拥护党的基本路线，德、智、体、美全面发展，掌握生物技术的基础理论，熟悉常用的生物技术和工艺技术，能胜任食品、功能性食品的生产、开发，食品企业和酿酒企业生产、经营管理第一线的高等技术应用性专门人才。

学习掌握食品微生物学、食品生物化学的基本知识。掌握食品加工用原辅料的质量要、验收方法。熟练掌握食品加工过程中每一工序的目的、工艺条件、所用设备、操作规程及品质控制。运用食品工程技术和生物工程技术制作常见的功能性食品。掌握微生物发酵工程的基础理论。熟练发酵技术在食品工业中的运用。掌握发酵液的预处理技术。掌握常用过滤设备和过滤分离的基本方法。掌握生物分离产物的浓缩及结晶技术。还要学习无机化学、有机化学、分析化学、食品卫生、食品企业管理等方面内容。

为加强食品生物技术专业学生实践能力训练，构建了由基本技能、专项能力、综合能力三个层次系列训练组成的，并与理论教学体系相对独立又有机结合的实践教学新体系。通过专业专项技能训练增强岗位适应性、针对性。我们对实验教学内容做了4个教学模块规划：酒类产品实践教学模块；乳制品实践教学模块；食品工艺与功能保健食品实践教学模块；食品卫生与生物检测分析实践教学模块。

转基因生物的简介

随着分子生物技术的不断发展，尤其是上世纪90年代末以来，科学家们能够在不导入外源基因的情况下，通过对生物体本身遗传物质的加工、敲除、屏蔽等方法也能改变生物体的遗传特性，获得人们希望得到的性状。在此类情形下，没有转入外源基因，严格说就不能再称为转基因，称为“基因修饰”更加合适和全面，因此现在开始用“Genetically Modified Organisms（简称GMOs）”，即“基因修饰生物”，来代替早期的“Transgenic Organisms”。因此，现在我们所指的“转基因生物”，其概念已经为“基因修饰生物”所涵盖。但因为“转基因”一词已经普遍为人们接受，而且外源基因导入仍然是目前分子生物技术在作物育种领域中所采用的主要方法之一，“转基因生物”一词就沿用至今。基于此，本文继续沿用“转基因”一词，不过是在“基因修饰生物”的意义上加以使用。
